5.24.12

Well, It's not even 7AM yet and I've already had a favorite memory. 
We are so lucky to have such a goofy spirited little boy~ 
He keeps us constantly laughing! 
This morning at 6:15AM- My alarm goes off, and moments later... I hear Kai from his room a little angry- yell.. AHHH... MOMMM!! and as usual I get up and hurry to him to see what's going on.. and he is standing by his bedside, and says "I PEE'd THE BED, ACCIDENT, I PEE'D THE BED" It was just the cutest darn thing.. I told him- It's okay you were sleeping, it was just an accident.. changed him and took the wet blanket off his bed and layed him back down. 
 What a blessing he is, thank you Lord. <3 We love him so much~

5.21.12

Today, Kai and I had two Dr. Appointments we had to get to all before noon. Before appointments, we usually always stop by the Country Donut shop in Medford. This morning, I decided to switch that up and try a mommy and Kai trip to McDonalds for some breakfast. Things like this make me feel so lucky that I am able to spend my days with him, rather than at a workplace. He was so sweet, as we sat side by side. He wanted pancakes (His favorite). My little best friend. We have shared so many special moments together, and look forward to a life of many more. :) 

Favorite Daily Moments~

All of my life, I have wanted to keep a journal but as always I get about 5 days into it and forget to continue writing. I'm really enjoying this blogging idea and I also love that it is on a website and cannot be destroyed. I also, can stop and continue whenever I'd like. Instead of trying to journal a few pages every night of what my day was like.. I'm going to attempt to write just a paragraph or two of my most favorite part of the day. In hopes of doing this everyday- I know that is probably not going to happen, but I will be happy with just a few days a week.. I know my kids will appreciate having it to look back on when they are my age. :)

Potty Training ~

What an adventure it has been. We have now started training at 3 different times of Kai's life and RIGHT NOW- was the best, because it didn't take him longer than 2 weeks to get it. With bribery of potty candy, his parents making him feel totally proud and plenty of accidents.. He finally understands. I think the best part of it all is when I give him sentences to use: He uses them and I believe that is what helps the most- That he is able to converse with us what he needs to do. 
"I have to pee." 
"I have to poop"
"I made a poop"
When we flush he says- "Bye bye pee pee"..and "Poo poo"
Out of all the stages we have started and tried at this one is by far the best- He isn't quite 2.5 yet and is potty trained by 3 years old. :) 
We have Emee coming in about 9.5 weeks and I was determined 2 weeks ago to get him potty trained, thinking it would take the full 10 weeks.. but he is down to no accidents.. (Very rare for him to pee at night) We just have to work on him UNDERSTANDING- He needs to get out of bed at night- come get me and we will go potty when he has to go. . . ? That seems like an adventure all within itself.. But we will get there too. :) 
I love these little stages that seem never ending, and when they end.. I feel so proud of Kai, myself and Cory..

Homemade Green Chile Chicken Enchiladas-


My very own Green Chile Chicken Enchilada Recipe....

10-16 Large Tortillas
1 Bag of frozen chicken
1 lb. of Monterrey Jack cheese.
1 Large can of diced green chilies. 
I Large can of Green Verde Enchilada Sauce
I small can of diced olives. 
Two glass baking dishes- or 1 LARGE one.
1 bunch of green onions. Cut up

Makes about 10 enchiladas. :) 





Start by getting thawing your bag frozen chicken in a large boiling pot of water. 
When thawed and hot, place on plate and let cool. 
Grate your 1lb of Monterrey jack cheese into it's own bowl. 
Shred all of the chicken you can into another mixing bowl, add half of your cheese, your diced green chilies, half your chopped green onions and almost half the can of green sauce to the chicken mix. 
Stir the chicken mixture with hands and your ready to put into tortillas. 
Add a handful of chicken mixture to the end of a tortilla and roll it, add to pan. 
Repeat this for about 9 more enchiladas, all while adding to pan. When Finished rolling all enchiladas--- Sprinkle the remaining cheese over all of your enchiladas. Then use a tablespoon to pour the green sauce over each and every enchilada. . . 
When finished, sprinkle your chopped olives and green onions over the enchiladas. and Wa-LA~ BAKE IN THE OVEN AT 375° for 25 minutes.

Favorite Things Friday: Co-Blogging for Crystal Huntsman!

My "someday" sister in law ;) blogs and every Friday she posts a few of her favorite things and explains why they are her favorite. I'm going to hop in and write about a few of my favorite things for her, by "co-blogging."

1. Burberry Brit by Burberry: This is one of my all time favorite perfumes! I just cannot seem to wear it enough, and I have a pretty nice collection.. but this one always gets my pick~ :) It's a light and sweet smell that goes a long ways. 
2. Almond Poppy Seed Muffins: Now, I'm 28 weeks pregnant.. So, I definitely have to add one of my favorite food delights to the list. . . and this is it. I was out grocery shopping last week and saw this pack of 6 HUGE almond flavored poppy seed muffins- with 360 calorie for only 1/2 of a muffin. I'm a SUCKER for poppy seed muffins so I bought them. They are delicious. :) Now, I know everyone doesn't have these awesome muffins to buy that come cooked and wrapped at the store, but you can easily prepare them yourself or use this easy box of Krusteaz Almond Poppy Seed Muffin mix. :) These are just as tasty. . .

My love for this company started out when I received a notice of getting $75 worth of all different kinds of Organic seeds for just $5. Thought that was great.. When planted- they grow amazing, tasty vegetables and not to mention they are 100% Organic seeds and when used with Organic soil/fertilizer you get organic veggies! I was shopping in Walmart last night and noticed that you no longer have to buy them through site or catalog.. because they are a part of Walmart's inventory now. Thought that was awesome too. All you organic people should give them a try!~
